    This looks and sounds delicious and I want to make it. But it seems like the fermetation part was left out. Isn't the fermentation the part that makes Kimchee so special?

      This kimchi is not a fermented version. I don't ferment summer kimchi. Not all kimchi necessarily needs to be fermented.

    Yes this is all time favourites in South ESt Asia. Chef Jia version is very similar to our local fried spicy anchovies.We call this Blachan Ikan Bilis. Blachan is a chili sauce similar to Korean spicy chily🎉❤😂

      I am not sure if western pear has a similar enzyme. I recommend to use half tablespoon of ground kiwi. Make sure to use small amount of it, because kiwi's enzyme is much stronger than Asian pear's! : )

      I recommend buying beef at an Asian market. They might have thinly cut beef. If you ask the butcher, you can request paper-thin cuts of beef. : )

      Chicken doesn’t need to marinate for too long. However, a bit longer time, like 1 hour, would make this dish even more delicious! : )
